Happy Birthday to Me!

What an awesome day! Yesterday was my 35th birthday! I had a full long day with the man and kids. This year I thought to myself if I get out the house my number 1 mission is to make it to Sephora and Ulta for my free birthday gifts! I always miss them every year but not this year!!!  Sephora/Ulta Birthday gifts! So we started the day at Denny’s where I had a grand slam breakfast free (all you need is to show your ID). Lennox spilled his orange juice on my feet and Dj knocked his sprite into my lap. Yay me! So we hurried up and I took my jeans off in the parking lot. The upside to living in a beach town is that my actions were ‘normal’ 😂   We headed to Target where the man so kindly ran in to purchase me a new pair of pants so we didn’t have to drive home. Next stop, the mall. I rarely ever go to the mall. So little in fact that we didn’t even know that all the shops don’t open until Noon. Amazing Egg Bites

I’m slightly obsessed with making my own egg bites now! Starbucks is great but if both me and Husbeard both buy 2-3 servings each we’re going to go for broke real fast. So I played around and tweaked a recipe I liked until it had me twerking in the kitchen!  *this made six...but I ate one! I blend 3 eggs with 2tbsp of heavy whipping cream, 1/3c of cream cheese, and 1tbsp of rice flour until smooth. Then I strain it to get lumps out. I use and fill silicone molds then add seasoning and shredded cheese. To cook them I boil two inches of water in a skillet that has a cover. Place filled molds in skillet and cover. Cook for about 10 minutes or until you can see center is set. It comes out super silky like Starbucks egg bites. And you can put anything in it. Last week was pepperoni and mozzarella. These are cheddar with southwest mrs dash. Next week is black forrest ham and baby Swiss!!
